Green Peas Kootu

INGREDIENTS :
  1. Green peas           - 1/2 cup
  2. Chopped onion      - 1/4 cup
  3. Tomato                  - 1
  4. Cinnamon              - 1 piece
  5. Clove                     - 2
  6. Cardamom            - 2
  7. Ginger&garlic paste   - 1 tsp
  8. Mustard seeds          - 1/4 tsp
  9. Curry leaf
  10. Coriander leaf
  11. Oil for fry
  12. Salt to taste
  13. Turmeric powder      -  1/4 tsp
  14. Red chilly powder     - 1 spoon
  15. Channa masala         - 1 spoon
METHOD :
  1. Heat oil, add mustard seeds, curry leaf and chopped onion. Fry well.
  2. Add tomato. Fry well.
  3. Add ginger & garlic paste, clove, cinnamon, and cardamom. Mix well.
  4. Add turmeric powder, red chilly powder and channa masala.
  5. Add green peas, salt and water. stir well.
  6. Allow it to boil for 10 minutes.
  7. Garnish with coriander leaf. 

Keerai ( Greens ) Kootu

INGREDIENTS :
  1. Chopped greens      - 1 bunch ( You can use any greens)
  2. Tuvar dal                 - 1/4 cup
  3. Dry red chilly          - 2
  4. Urad dal                   - 1 tsp
  5. Cumin seeds            - 1/4 tsp
  6. Grated coconut        - 1 tsp
  7. Asafoetida                - 1/4 tsp
  8. Mustard seeds        - 1/4 tsp
  9. Small onion              - 1/4 cup
  10. Curry leaf                - few
  11. Oil for fry
  12. Salt to taste
METHOD :
  1. Cook tuvar dal in pressure cooker.
  2. Grind grated coconut, Dry red chilly and cumin seeds.
  3. Heat oil add mustard seeds, urad dal, chopped onion, asafoetida,and curry leaf. Fry well.
  4. Add chopped greens and salt.
  5. Close it with a lid. cook the greens in slow flame.
  6. When the greens is cooked add cooked tuvar dal and stir well.
  7. Then add ground items.
  8. Add little water and make semi liquid.
  9. Allow it to boil for 5 minutes.
  10. Keerai kootu is ready.

Cabbage Masala Kootu

INGREDIENTS :
  1. Chopped onion       - 1/2 cup
  2. Cabbage                 - 1cup ( Shredded)
  3. Moong dal              - 1/4 cup
  4. Cinnamon                - 1 piece
  5. Clove                       - 2
  6. Cardamom               - 1
  7. Grated coconut        - 1 tsp
  8. Dry red chilly           - 4
  9. Coriander seeds
  10. Oil for fry
  11. Salt to taste
  12. Cumin seeds          - 1/4 tsp
  13. Mustard seeds      - 1/4 tsp
METHOD :
  1. Heat pan add cinnamon, cloves, cardamom, cumin seeds, and coriander seeds. Fry till it turns into light brown color.
  2. Grind the fried items with grated coconut, red chilly, and water.
  3. Heat oil Add mustard seeds and chopped onion. fry well.
  4. Add moong dal and water. Allow it to boil for 5 minutes.
  5. Add cabbage and ground masala items. Let it boil until it is thick.
  6. Cabbage masala kootu is ready.

Mango Dal Kootu

INGREDIENTS :
  1. Mango           - 2 cup
  2. Tuvar dal       - 1/4 cup
  3. Green chilly   - 4
  4. Mustard seeds  - 1/4 tsp
  5. Asafoetida         - 1/4 tsp
  6. Oil for fry
  7. Salt to taste
METHOD:
  1. Cook tuvar dal in pressure cooker.
  2. Cook mango.
  3. Heat oil, add mustard seeds, green chilly, and asafoetida. Fry well.
  4. Add tuvar dal, mango and salt.
  5. Allow it to Boil for 5 minutes. 

Brinjal Kootu

INGREDIENTS :
  1. Brinjal             - 3-4
  2. Tamarind        - Lemon size
  3. Turmeric powder  - 1/4 tsp
  4. Asafoetida            - 1/4 tsp
  5. Mustard seeds     - 1/4 tsp
  6. Urad dal                - 1/4 tsp
  7. Dry red chilly       - 2
  8. Green chilly         - 2
  9. Small onion          - 8- 10
  10. Salt & oil as required.
  11. Curry leaf   - few
METHOD :
  1. Soak tamarind in water and extract pulp. keep aside.
  2. Cut brinjal into small pieces.
  3. Heat a oil, Add mustard seeds when it spluters.
  4. Add Urad dal, dry red chilly, green chilly, chopped onion, and curry leaf. Fry well.
  5. Add brinjal, turmeric powder, and salt. Mix well
  6. Pour tamarind extract.
  7. Cook in medium heat and stir in between.
  8. Brinjal kootu is ready.

Cauliflower - Carrot Kootu

INGREDIENTS :
  1. Cauliflower      - 1 cup
  2. Carrot              - 1 cup
  3. Coriander seeds    - 1/2 tsp
  4. Grated coconut      - 1 tsp
  5. Cumin seeds          - 1/4 tsp
  6. Green chilly           - 3
  7. Small onion            - 1/2 cup
  8. Turmeric powder   - !/4 tsp
  9. Mustard seeds      - 1/4 tsp
  10. Curry leaf              - few
  11. Urad dal + Tuvar dal + Moong dal (mixed)   - 1/2 cup
  12. Oil for fry 
  13. Salt to taste
 METHODS :
  1. Cut vegetables into small pieces.
  2. Cook carrot & cauliflower.
  3. Cook all dals in pressure cooker.
  4. Heat a pan, add Coriander seeds, and cumin seeds. Fry till it turns into light brown color.
  5. Grind the fried items with grated coconut, green chillies, and water.
  6. Heat oil in a pan, add mustard seeds, chopped onion, and curry leaf. Fry well.
  7. Then add all vegetables and cooked dal. Stir well. 
  8. Add ground items, salt, and turmeric powder.
  9. Cook for 5 minutes till it becomes thick.
  10. Cauliflower carrot kootu is ready.

Lady's Finger kootu

INGREDIENTS :
  1. Lady's finger      -  2 cup
  2. Tamarind            - Lemon size
  3. Dry red chilly     - 2
  4. Green chilly       - 2
  5. Mustard seeds   - 1/4 spoon
  6. Urad dal              - 1/2 spoon
  7. Asafoetida          -  1/2 tsp
  8. Turmeric powder  - 1/4 tsp
  9. Small onion           - 10
  10. Curry leaf             - few
  11. Oil for fry
  12. Salt to taste
  METHOD :
  1. Soak tamarind in water and extract pulp. Keep aside.
  2. Cut Lady's finger into small pieces.
  3. Heat oil add mustared seeds, urade dal, curry leaf, dry red chilly, green chilly, and chopped onion. Fry well.
  4. Add Asafoetida, and turmeric powder.
  5. Add Lady's finger. Fry well.
  6. Then pour tamarind extract.
  7. Allow it to boil till thick.
  8. Lady's finger kootu is ready.
